Kids Recipe

1 tsp.olie oil
1/2 poblano chili(seeded and sliced)
1 medium red bell pepper(seeded and sliced)
4 green onions (sliced)
1/2 tsp.ground cumin
1/4 salt
2 tbs.cilantro leaf (chopped)
8 low fat tortillas
4 ounces low-fat monterey jack cheese (shredded)

Heat the olive oil in a skillet over medium heat and add the dhili.Cook for about 3-5-min.until soft.Add the corn and the green onions and cook for 5 mins. more.
Add the red pepper cumin and salt abd cook for 5 mins.until the red pepper begins to soften.
Turn off the heat and add the cilantro and toss until incorporated into the vegetable mixture.
Preheat oven to 350'f.Place 4 tortillas in the oven for 5 min. until warm.
Remove and turn on the broiler.Spoon one fourth of the vegetable mixture over each tortilla and top with with one ounce cheese for each one .Please in the oven under broiler until the cheese is melted
Top each with another tortilla and place back in the oven for about 3-5min.
Serve with cilantro sauce
